Chocolate Bars

In 1820, in order to map the locations of cacao plantations, Jean-Baptiste Gallais traveled across North America from north to south. Upon his return, he undertook a rigorous classification of the plantations, which was published in 1825 under the title *Monographie du cacao*, a seminal work. The collection of chocolate bars reflects Gallais’s vision, featuring cacao from various origins and high cacao content.
